Ingredients
- 1 tbsp butter
- 1–2 garlic cloves, minced
- 3/4 cup Israeli couscous
- 1 cup low-sodium chicken stock
- Juice of 1/2 lemon
- 1/4 cup finely grated Parmesan cheese
- Salt and pepper, to taste
- Chopped parsley for garnish (optional)
How to Make Lemony Israeli Couscous
Heat a skillet over medium-high heat and melt the butter. Add the garlic and stir until fragrant, about 30–60 seconds.
Add the Israeli couscous and stir occasionally, allowing it to become lightly toasted and slightly browned, about 3 minutes.
Pour in the chicken stock. Once it reaches a good simmer, reduce the heat to low and cover. Cook for 10–12 minutes, stirring occasionally, until the stock has been absorbed.
Remove from the heat and let sit for a couple of minutes. Stir in the lemon juice and Parmesan cheese. Season with salt and pepper to taste.
Garnish with chopped parsley if desired and serve immediately.
